  • 1 packet of fettuccine or spaghetti
  • 3 pieces of chicken breast
  • 1 cup of colored pepper
  • 1 cup of mushrooms
  • 1/2 cup of black olives – sliced
  • 1 teaspoon of paprika
  • 1/2 teaspoon of spices
  • 1 1/2 teaspoons of salt
  • 1 1/2 teaspoon black pepper
  • 3 tablespoons of oil

Negresco sauce

  • 6 tablespoons of flour
  • 5 tablespoons of butter
  • 1 1/2 liters of milk
  • 1 cup of cooking cream
  • 1 stock cube
  • 2 tablespoons of cream cheese
  • Salt and black pepper

  • 2 cups of mozzarella cheese
  • 2 cups of cheddar cheese

Modus operandi of Negresco with chicken and mushrooms

  • Boil the pasta in boiling water with a pinch of salt and a spoonful of oil, about 6 minutes, until it becomes half cooked, then put it in a colander until you finish the rest of the steps.
  • Wash the chicken breasts well, then drain them from the water and cut them into small cubes
  • Put the oil in a pot on the fire until it is completely heated, then put the chicken pieces and fry them until their color changes
  • Put the spices, paprika and half a spoonful of black pepper and stir them with the chicken and leave it on the fire until it softens
  • Put the mushroom with the chicken until it wilts a little, then put the olives, pepper, and half a teaspoon of salt, and stir them well, then remove them from the fire

How to make Negresco sauce

  • Put the butter and flour in a saucepan over the heat and keep stirring until the butter melts and the mixture turns a light color
  • Gradually pour the milk into the flour, stirring constantly so that there are no lumps
  • Put a spoonful of each of salt and black pepper and stir them with the sauce
  • Add the cream and cream cheese, stir the sauce well, then remove it from the heat

Preparing a tray of chicken Negresco pasta

  • Turn on the oven until it heats up at 200 degrees Celsius
  • Put the chicken on the pasta with a cup of Negresco sauce and half the amount of mozzarella and cheddar cheese and stir well.
  • Put about a cup of sauce in an oven tray and spread it, then put the pasta mixture with the chicken
